The Happy Birthday Post!

It’s 5:30am and guess what - it’s officially my birthday! 26 years old baby. I’m afraid I don’t have time to write much since Wednesday is the busiest day of my week. After catching the 6:50am train into the city I have classes until 3:10pm, after which I make a mad dash for the train station so I can get to work in time to teach until 9:00pm. Whew! Still this super busy day has gotten off to an amazing start. My husband (who usually gets up at 6:30am to drive me to the train station) got up at 4:30am today just so he could bring me breakfast in bed when I got up at 5:00am! Is that sweet or what? The menu: eggs over easy, toast, spice cake, fresh melon, orange juice, coffee and chocolate covered strawberries from Godiva. Wow. I’m a very lucky woman.

As a special treat I decided to bake cookies for my students - just because I can’t go out and celebrate tonight doesn’t mean I can’t bring a bit of celebration to the classroom right? I hope they like them:

Coconut Oatmeal Drop Cookies
Coconut Oatmeal Drop Cookies

Ok, so I’m off but before I go, three things: 1) Mom, Dad - thanks for being so great! When I think back on the past twenty-six years I have so many happy memories to thank you for. 2) To my husband, thanks for being such an amazing guy! And 3) I typed up the recipe for these scrumptious coconut oatmeal drop cookies last night so that I could share something tasty with you on my birthday, even with zero computer time. Enjoy!

Coconut Oatmeal Drop Cookies
Makes: 3 1/2 dozen cookies
Bakeware: Cookie sheet

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup firmly packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons pure vanilla extract
  • 1 1/2 cups rolled oats
  • 1 cup sweetened shredded coconut

Preheat oven to 375 degrees F.

In a small bowl, combine the flour, baking soda, cinnamon, and salt. Set aside.

In a large bowl, cream the butter with the sugars until smooth, about 2 minutes. Add the egg and vanilla, and beat well. Add the dry ingredients and mix thoroughly. Stir in the oats and coconut. Drop by rounded teaspoonfuls onto ungreased cookie sheets, leaving several inches between for expansion. Bake for 12-14 minutes, or until lightly golden.

Cool the cookies on the sheets for 5 minutes, and then remove to a wire rack to cool completely.

    Happy Birthday! Wednesdays are always busy for me, too and my birthday falls on a Wednesday right in the middle of a test week! Oh, well! Glad that you had someone to celebrate with you this morning and tonight (with your students). These cookies look great, I’ve been wanting a coconut cookies. This may fit the bill. Do you think unsweetened coconut would be okay?

    Not only does Brad share your birthday, but he was also 26 yesterday! We went to dinner, but we didn’t embarass him with any singing (waitstaff or family.)

    You’re lucky to have that man. I did NOT get up and cook for Brad. I did, however, schlep myself out of bed 5 minutes for a hug, kiss and ‘happy birthday, sweetheart.’ Ha.

    Claire, I’m not sure. You’d have to play around with the amount of sugar in the recipe but otherwise it would probably be fine to use unsweetened coconut. :)
