Refreshing Pomegranate Gelatin
“Springtime is the land awakening. The March winds are the morning yawn.”

After a few bitterly cold weeks with temperatures averaging around 10 degrees F, we are reveling in some wonderfully warm weather. I could hardly believe it when I went for a stroll this afternoon and discovered it was nearly 60 degrees outside. I was so happy I almost skipped around the block. :)

Weather like this makes us realize that Spring is just around the corner, and to celebrate my husband made pomegranate gelatin. Refreshing, high in antioxidants and delicious to boot, this is a dessert that takes mere moments to put together. Next time we may add fresh blueberries too.

Note: The gelatin pictured here was made with kosher gelatin, which is composed of vegetable gums instead of animal bones/skin. We followed Alton’s Brown’s recipe, found here, and used 100% pure organic pomegranate juice by Elite. (i.e. Not from concentrate.) Gelatin is sold in most supermarkets, though be sure to alter your method accordingly if you use the kosher variety. While you usually have to “bloom” animal-based gelatin, vegetarian gelatin is added straight to your liquid then mixed vigorously. Check the package instructions.

    I love the tartness of pomegranates, but fear that blueberries would just be lost in all of that… paper-thin slices of lychee fruit would be a nice textural counterpoint, though, I bet.

    I love the color, it’s so vibrant and rich with just the right amount of calories. Can’t get any better!

    My girlfriend loves pomegranites so I’ll forward this to her, Ari. I’ve got a silicon mold that will work great with this. I love how easy they are to use and clean up.

    I just watched Alton make that last week and have been wondering how it turns out for people. Did you use the seeds like he did? If so, hooray for you for braving the strange world that is pomegranates…I have yet to try… :)

    Silus - You could be right but I’ll never know until I try it, which I shall! I just can’t resist. :D

    Monisha - I think the color was one of my favorite things about this. How could you not enjoy eating something so purple-y?

    Utenzi - I used silicon molds too, they’re great! The gelatin pictured actually came out of a mini-mold, though I’m not sure you can tell in the image.

    Melissa - I didn’t use the seeds, alas. Whole Foods didn’t have any pomegranates and we really wanted to try this recipe so we settled for organic 100% pomegranate juice. It still came out great though. :yum:

    Connie - I’m glad you like it. But I have to say: I don’t think this gelatin is “tacky” or “lowbrow” - which is the definition of kitsch after all. Ouch! Rather, I think it’s simple and fun. Kinda like the summer treats I enjoyed as a kid. :)

    This is such a cool idea Ari! Usually “Jello” is just some out of the package dry stuff, with no vitamins and certainly no antioxidants. AB’s version is the sort of thing you can feed your kids and feel like you’re tricking them, lol.

    This looks absolutely delectable! Almost too good to eat because the mold makes it look so perfect. I will definitely try this out soon, and maybe even add to a trifle in place of regular jelly? I may have missed something, but why is AB’s version bright red and this one a dark purple (albeit a gorgeous color!)?

    I love Jello or Gelatin! Now I need to buy a mold and search for kosher gelatin, I think this is an ideal dessert for the hot days we are experiencing on the West Coast right now. :)

    Khadeeja - The difference in color could be many things: how ripe the pomegranates he used were, the lighting, the fact that he added seeds, etc. Eh, so long as it tastes great! (Which it does, hehe)

    What a great flavor for gelatin! (I LOVE gelatin!). I only recently had my first taste of pomegranate juice , because they were selling them at the warehouse store I frequent I decided to try it. It was a little too tangy for me and had to dilute it a little bit in water. But once I did, i loved it. Now I love the idea of making it into gelatin!

    Lydia - That’s what I love about this, it’s a dessert that tastes wonderful but is good for you too. Antioxidants, low on calories, flavorful - what more can you ask for/

    Jami - If you’re on a pomegranate kick then you should definitely try this one! Lots of fun to make and eat. I like to giggle the gelatin on the plate as I walk to the table, lol.

    Aria - Yea, it’s kinda creepy to think about what goes into regular gelatin. I love eating steak, but ground up bones and skin? Somehow that feels different to me.

    We got 80 F here in Richmond today. It’s going to get colder again though , but that taste of Spring is great. Your husband is so sweet making this dessert to celebrate the return of the warm weather. Hubby and I are that way too, we always find a reason to create a something special :).

    Gilly - It’s snowing today but for two days we had a taste of Spring. So nice! I can’t wait until Spring actually arrives.
