Work has been a flurry of meetings, ringing phones and flashing keyboards lately, so I decided to lighten things up with miniature loaves of strawberry bread. Topped with sliced almonds and flavored with mashed strawberries and almond extract, a slice of this pretty bread makes a tasty coffee companion. And the best part? The batter is pink! If I had a little girl at home I imagine we’d be making this one at least once a month.
That’s it for now. I’m keeping it short and sweet this evening in the hopes of hitting the sack early and doing my cardio salsa video in the morning. Por que soy super hot. Ay! 
Strawberry Bread
Reprinted with permission from “The Best Bake Sale Cookbook Ever”. Two copies of which, incidentally, are in the cookbook raffle. (Hint, hint.)
Ingredients: Makes 1 regular sized loaf or 3 mini loaves
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, or margarine, cut into pieces, at room temperature
- 1 cup granulated sugar
- 1/2 teaspoon almond extract
- 2 eggs
- 1 cup crushed strawberries or 1 package (10 ounces) frozen strawberries, thawed and drained on a double thickness of paper towels
- 1/3 cup sliced almonds
Preheat the oven to 325 degrees F. Spray or grease a 9 x 5 inch loaf pan or a mini loaf pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. In a large bowl, using an electric mixer, cream the butter, sugar and almond extract until light, about 2 minutes. Beat in the eggs one at a time, beating well after each addition. Mix in the flour mixture alternately with the crushed strawberries.
Spoon the batter into the prepared pan. Sprinkle the top with the sliced almonds. Bake in the center of the oven for 55 to 60 minutes (50 to 55 minutes for mini loaves), or until a cake tester or toothpick inserted into the center comes out clean.
Cool the bread in the pan for 5 minutes, then invert onto a wire rack and turn right side up to cool completely.
Bonus! Top your bread with an irresistible strawberry spread. Blend 1 package (8 oz) of softened cream cheese with 1/4 to 1/3 cup of strawberry jam. Yum.

Ari, I have to confess to a quick loaf addiction, I think because banana bread was probably the first thing I ever really baked. I have never, however, made a quick loaf with strawberries. It’s a great idea, so I just might have to give it a try.
As soon as the weather cools down I am making the mini loafs. This is the exactly what the doctor ordered to go with my morning coffee.
I had never heard or seen strawberry bread….but this is super.

Mishmash – Me too! Especially with hope pink the batter was, and it was VERY pink, I thought the finished product would retain the color. Still tasted delicious though, with flecks of strawberry strewn throughout.

Strawberry bread! Sounds fantastic and I love how the batter is pink.
looks very yummy, but I am not a fan of fruity bread, I am more a zucchini bread type gal. How is the cardio salsa video, is it tough? Some of my workout dvds are getting too easy/boring I am looking for some tougher recs that will keep me sweating.

I am SO totally going to make this. I’m on a baking kick, having just made some lemon raspberry muffins and a grapefruit yogurt cake…but those prove a bit sour for the boyfriend’s tastes (apparently my love for all things sour is a “female” thing).

Oh, this strawberry bread looks delicious. My friend shared beet bread with me last weekend which also had a red batter and was really yummy!
Made these tonight with my “just about to turn” strawberries. I did the minis. I’ll let you know how they taste in the morning. I’m thinking it will be divine with peanut butter.

CountryGirl – It’s a pretty entertaining video, not super heavy on the cardio, but fun. If you want a tough video go with the “10 Minute Solution: Kickbox Bootcamp” with Keli Roberts. Especially if you do the entire video in one session, it will totally kick your butt. I often do the entire thing at once and it leaves me sore the next day, but feeling great. You can watch it for free if you have Netflix account on their website, btw.
