Thank you to everyone who answered the question I asked in my Pumpkin Currant Cookies post! As promised I’m posting the results of the book raffle that was part of that entry. I used a random number picker to select the winner, and that lucky person was Claire of Cookthink!

Enlightened Chocolate Congratulations Claire, and to everyone else, don’t be too bummed because guess what: I have another book to give away! Enlightened Chocolate, by Camilla Saulsbury, two copies of which showed up on my doorstep the other day, and one of which I would love to send to you. The recipes in this book range from Spanish hot chocolate with orange, espresso and spice, to chocolate souffles with raspberry sauce, to the yummy chocolate-flecked multigrain muffins you see pictured above. And if all that chocolatey goodness isn’t enough for you, consider this - the recipes in this book are healthy. Not carrot or spinach healthy, mind you, but healthy in the sense that they feature whole grains, dark or bitter-sweet chocolate and dried or fresh fruits. (There is one recipe the includes corn syrup and I wasn’t a fan of that, but otherwise everything looked good.) The chocolate muffins you see here satisfy in the melt-in-your-mouth way that chocolate should, while also delighting your tastes with toasted wheat germ, whole grain flour, cinnamon and diced dates. Together these flavors pack a serious punch that you can enjoy guilt-free, since each muffin has a mere 219 calories and 8.9 grams of fat. Not bad for a sweet treat if you ask me, and certainly welcome with a tall glass of cold milk or a hot cup of homemade pumpkin-spice latte.

Chocolate-Flecked Multigrain Muffins
Adapted from Enlightened Chocolate, by Camilla Saulsbury

Ingredients: Makes 12 muffins

  • 1 cup + 2tbs whole wheat flour
  • 1/4 cup granulated sugar
  • 1/4 packed dark brown sugar
  • 4 tablespoons toasted wheat germ
  • 2 tablespoons unsweetened cocoa powder (not dutch process)
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups quick-cooking oats
  • 2/3 cups chopped dried dates
  • 1 cup buttermilk
  • 1/4 cup olive oil
  • 1 teaspoon vanilla extract
  • 1 large egg, lightly beaten
  • 1/2 cup + 2 tbs boiling water
  • 2 ounces semi-sweet or bitter-sweet chocolate, chopped

Preheat oven to 375 degrees F.

In a large bowl whisk the flour, sugar, brown sugar, wheat germ, cocoa powder, baking soda, cinnamon and salt until blended. Stir in the oats and dates. Make a well in the center of the mixture.

In small bowl whisk the buttermilk, olive oil, vanilla and egg, then add the liquid to the flour mixture, stirring just until moist. Stir in boiling water. Let batter stand 15 minutes. Stir in the chocolate.

Spray a 12 cup muffin tin with nonstick cooking spray. Spoon batter into prepared muffin cups. Bake 18-20 minutes or until muffins spring back when touched lightly in center. Remove muffins from the tin immediately. Place on a wire rack and cool.

    Of all the ways I love chocolate, I think dark chocolate peanut butter ice cream is tops. (Luckily, I thought of that - otherwise I would have said in a McDonald’s hot fudge sundae!) :)

    I love plopping a warm, freshly-baked tray of brownies on a table surrounded by my friends, distributing spoons, and having each of us dig in, while the brownies are still hot and gooey. YUM

    A well-tempered bar of dark chocolate is my go to, like a comforting cup of tea. But when I want to spoil myself I visit my favorite chocolatier, Chuao, for a “parchita”, a perfectly formed heart-shaped bon bon filled with passion-fruit infused caramel. I bite out the back, lick out the caramel and then finish the last of the shell in one bite.

    My favourite way to eat chocolate would be to share it with the love of my life, I think that’s when you can taste the sweetness of the chocolate (even if they are dark ones). Truly yummylicious! =)

    I love all dark chocolate, but what I find myself doing on nearly a daily basis is helping myself to 1 tbsp of Ghirardelli Bittersweet chocolate chips!. If I’m dieting, sometimes just inhaling the aroma is enough. I think that these are just the best for a quick chocolate flavor hit!

    I love chocolate paired with espresso for an extra jolt! In my favorite chocolate chip cookie I add espresso powder for that nice combo of bitter & sweet.

    Yumm…I love chocolate in all its many forms, but I’d have to say my favortie would be dark, dark, dark. Dark chocolate flourless cake, a bittersweet souffle, in korova cookies, or if I really need a fix I’ll just eat a square plain <3

    For chocolate, there is nothing like eating a chocolate bar at your desk at work when you’ve got that horrid mid-afternoon sleepy (read: bored) slump. It makes it all just a bit sweeter, not to mention gives you that much needed sugar rush to get through the rest of the day! :)

    What ISN’T my favorite way to eat chocolate!! I have it in some form every day…a bit of chocolate a day just makes everything better! I like to sit with 2 or 3 of my favorite high quality chocolate bars and just nibble a bit from each while relaxing in front of the TV! Those Chocolate Multigrain Muffins sound awesome, I’m going to pull out the ingredients now and get started!

    Hands-down, it has to be straight-up dark chocolate bar. It really allows me to eat it as my mood shifts. Sometimes I’ll just chew it up hastily and other times I’ll savor it slowly by letting it melt on my tongue. Admittedly, I try to savor the really ‘good’ bars that I get to eat. after all, a $7 bar of chocolate should be savored, no?

    But I am reminded of the whole idea of ‘drinking chocolate’. That’s pretty tasty as well…

    Just a simple little square of really good dark chocolate, eaten very slowly. I love breaking it into little pieces and savoring each one, letting it melt in mouth.
    If there’s anything I love with my chocolate - it’s salt. A good sea salt or Fleur de sel dark chocolate caramel or truffle. Heavenly.

    After shaving chocolate for a baked dish, I love how the heat of my hands melts the chocolate as I transfer it from the cutting board to the double boiler. My favorite way to eat chocolate? I love sucking the remaining chocolate off my fingertips…while I wait for the simmering water to melt the mass of chopped chocolate. Talk about multi-tasking! :)

    My favourite way to eat chocolate is melted. I like to gently melt the chocolate and then dip strawberries, bananas, marshmallows and generally anything I can get my (now chocolate stained) hands on, before licking the bowl clean with no trace of shame or guilt whatsoever! (well, almost).

    My favorite way to eat chocolate is out of the bowl right off the spatula after making ganache or a cake. The cake is in the oven, there is the anticipation of good things to come, and the baker’s reward is to “clean” the dishes. My second favorite way is with my husband, who was a dedicated vanilla boy until he met me. I get the bliss of chocolate along with the satisfation of knowing I brought someone over to the dark side. Devil’s food, indeed!

    My favourite way to enjoy chocolate is, umm, to break a large chunk off the bar and eat it. Preferably very dark chocolate, with a cup of tea, so that it gets all warm and melty in your mouth. Mmmm.

    Chocolate is best eaten in it’s purest form, in little pieces as it melts on your tongue. I especially love the bitterness of dark chocolate eaten this way. But I always have a special place in my heart for anything made with chocolate. My friends say I must have been a master baker in my former life. :)

    I found this blog while blogsurfing and stopped in my tracks to see my very FAV-O-RITE ingredient prominently featured, and touted as healthy! You hooked me - I’ll definitely be back!

    And to answer the question to win a cookbook devoted to chocolate (what could be better?): It’s tough to pick one favorite way, but I must settle on a baking tradition begun as a child helping my mother make Christmas cookies. When preparing to add semi-sweet (or similar) morsels to the batter, I have to consume at least 2 or 3 immediately upon opening the bag, or the entire recipe will be ruined. It’s a quite pleasant superstition with the added benefit of happy memories. :)

    I love taking a whole bar of chocolate and breaking off a piece at a time, listening to the snap, rubbing my fingers over the smooth sheen of the surface, and slowly placing the shard in my mouth, letting it dissolve slowly. Amano Ocumare is my favorite for doing this:)

    My favorite way to eat chocolate is to slowly nibble on the sides, letting it melt in my mouth. Mmm, the sweet and bitter taste of dark chocolate slowly tingling my taste buds. Then, I love to bite down big chunks of it, softly biting it and letting it melt slowly.

    It’s definitely a tough question to answer to … I guess my very favorite way to eat chocolate comes from my childhood… when I was a kid I was lucky enough to spend lots of time with my grand parents ( and a great bunch of cousins…) and for the “gouter” , our traditional afternoon snack, we used to have fresh bread, spreaded with flavorful fresh butter from the farm next door, along with different variety of chocolate….

    My favorite way to eat chocolate when I was younger was in a peanut butter cup! There is no wrong way to eat a Reeses they say…
    I would eat the chocolate around the perimeter, on the top and bottom, until finally all I had left was the peanut butter! It’s kind of messy but really good.
    Now I like it any way I can get it!

    Chocolate is the ultimate on-the-go energy bar. Forget Luna or Kashi or Nature Valley, Chocolate IS IT. Therefore, my favorite way to eat chocolate is on the go. I move, I’m hungry, I grab some chocolate (dark, if i want antioxidants with my sugar…)

    When I was young, I would fantasise about eating a whole family bar (preferably decked with nuts and raisins) on my own at a sitting. I never actually did it as it would have made me sick. Now that I’m older and more enlightened with my food choices, I like breaking off small chunks of dark chocolate and letting them melt on my tongue. Oh, and they must be room temperature.

    Very nice chocolate muffins there with the multi-grain accents!

    I love to eat chocolate curled up on my deck. Watching the creek roll by, wrapped in a blanket. Sipping a mug of hot coco or tea. Petting my dog.

    But, normally chocolate is eaten standing in the kitchen, dog begging at my feet before I head off to the stress of work, lol.

    I like chocolate in any form! My favorites are:
    Pudding chip cookies
    Chocolate chip cookies (Nestle Tollhouse)
    Brownie
    Fudge
    Or just simply a good tasty chocolate bar.

    once, as i was drinking mate with vanilla accents, i left a small square of bittersweet chocolate in my mouth and drank a sip of hot tea. the combination of the tea, as strong as coffee, with the flavors of the chocolate was delicious.

    Aw! Sorry for missing the contest but I love chocolate so I’ll share anyways :) My favorite was to have it is simple - in the darkest chocolate truffle you can find! :)

    The only way to eat chocolate is off your fingers as you are icing a cake. Of course, taking a bath with a good book and a bag of M and M’s on your tummy isn’t bad either. LOL

    I love a real piece of dark chocolate that melts at the bottom of my mocha (they serve it this way at my favorite cafe)
