Glad you enjoyed the recipe! I'm going to be visiting my family next week and am thinking of making this for them. It's too delicious to resist. :)

I made this last night for my family, along with the guacamole enchiladas (which we added chicken to, since my dad is stubbornly against any dinner that doesn't include meat). At first I contemplated not doing the zabaglione, "ah man...more dishes?!" but I'm so happy I did it. The zabaglione was easy following your instructions.

I did make one change, I used a honey-vanilla ice cream instead of vanilla bean. And while it still tasted delicious (I think any subtle flavored ice cream would taste great with this) I regret doing it because I think it distracted from the peach zabaglione. Next time I'll stick to vanilla bean for sure! Thank you so much!!

The person who wrote summer in a cup . . .called this one right. Although I don't like blackberries, I think blueberries would be delish.
