Plum-Peach Olive Oil Cake (Plus, Big News!)

If there’s one thing that always drives me nuts it’s produce gone to waste. There are two reasons for this: first, produce is darn expensive and throwing out plums, peaches or pears that are just a touch too ripe for impromptu snacking seems like such a waste; and second, it makes me very sad to think of all the “produce saving” cakes and buckles that aren’t being made. What a shame!

So today, when I noticed that the silver hued bowl that houses produce on my kitchen table had a lonely plum, peach and lemon in it, I knew I had to find a way to use them. The plum and peach were too ripe for snacking, and though I could have sliced the lemon and added the pieces to a cool pitcher of water (perfect hot weather refreshment!) I decided to defy the 95 degree F weather outside and bake a cake. A small cake though. That bakes fast.

The recent edition of Martha Stewart’s Food Magazine had the winning recipe, catching my eye with a mouth watering image of a plum cake dusted with confectioners sugar. I modified the recipe by replacing half the plum slices with peach slices, substituting olive oil for butter, adding baking powder and swapping plain yogurt for sour cream. The end result was a delicious and relatively healthy little Plum & Peach Olive Oil Cake that came together in 10 minutes and baked in 35. Not bad for a hot day, and even better when served with vanilla ice cream. Mmm mm.

This is why I think it’s such a shame to toss super ripe fruit.

Now before the recipe I feel like I owe you an explanation for dropping off the face of the blogosphere for more than a month. Blogging was out. Twitter was nearly out. And Facebook was definitely an infrequent friend. Why the sudden shift? Well, first there was the fact that we moved to a new apartment, but really the reason is that… I’m pregnant! That’s right, this foodie household has a very special bun in the oven and the 1st trimester did me in with overwhelming exhaustion and a complete lack of interest in food. I’ll spare you all the details but let’s just say that I didn’t enjoy the rocking motion of the cruise ship we were on in May as much as I might have otherwise. Hoo boy.

At our last doctor’s visit we got a great little photo of the baby, which I hope you won’t mind my sharing. I’m so happy I can tell you! It was so hard to keep it a secret. I’m almost 17 weeks along now and due in late January 2010.

We still haven’t decided if we’re going to find out the gender before it’s born. Here’s a question for the parents out there: did you find out beforehand?

Ok, enough dilly dallying – here’s the recipe. Enjoy!

Plum-Peach Olive Oil Coffee Cake
Adapted from Martha Stewart Food

Ingredients: Makes 1

  • 3/4 cup olive oil
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons finely grated lemon zest
  • 1/4 cup plain yogurt (or, sour cream)
  • 1 1/2 cups plus 2 tablespoons all-purpose flour, plus a touch more for tossing with fruit
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large plum, halved, pitted and cut into eight slices
  • 1 large peach, halved, pitted and cut into eight slices

Preheat your oven to 375 degrees F. Grease an 8-inch spring form pan with baking spray, such as PAM. Set aside.

In a large bowl using a spoon, thoroughly combine the olive oil, sugars, eggs, vanilla extract, lemon zest and yogurt.

In a small bowl, combine the flour, baking soda, baking powder and salt.

Add the flour mixture to the olive oil mixture in two batches, mixing until just combined. Pour batter into prepared pan and smooth top with the back of your spoon.

Toss the plum and peach slices with about 2 teaspoons of flour (I just grabbed a few generous pinches of flour and mixed it all up). Sprinkle the fruit slices over the batter, then bake the cake for 30 minutes or until golden brown.

Loosely tent the with aluminum foil and continue to bake until the sides of the cake pull away from the sides of the pan and a toothpick inserted in the center comes out clean, 5-10 more minutes. Remove from oven and allow to cool in the pan for 10 minutes before removing the sides of the pan. Dust with confectioners sugar and serve, warm and with vanilla ice cream if you like.

    Congratulations on the pregnancy! With my first son, I did not find out what sex he was, but with my second, I did. I found that it was easier to say to my older son, that he was going to have a brother…and his name is… For me, knowing the sex was more personable.

    Mazel tov, again!! He/she looks so cute already!! As for finding out the gender ahead of time, we knew with Alice but I think the second time around, I might not want to know… It was a teeny bit anticlimatic to know, and these days, birth is so demystified and scientific, that I think not knowing the gender would make it less scientific, or something! There’s something special about not knowing somehow, and it’s right up there with that Orthodox Jewish tradition of not revealing the baby’s name until the bris or babynaming.

    Congratulations again. We found out with our first two and opted to wait with the third. I think it was more exciting to not know until the doctor told us after she was born. Just as Nancy already said, everything else is so scientific and anti-climatic.

    I didn’t know the sex of my first three, but I needed to have amnio for my last one (due to my age at the time) and my husband wanted to know, so we asked. We didn’t want to share the sex of the baby with others (not even my mother-in-law) so I had a harder time keeping that a secret than I did keeping my first trimester secret!

    Mazal Tov! I will tell you that I preferred not to know. For me, all the fun of being pregnant was the anticipation of what would be- that’s just my personal opinion. I ‘ve had 3 children and didn’t want to know in advance with any of them what the gender was. I was thrilled and elated to have three healthy girls!

    Congratulations! We had three children and found out on each of them. My philosphy was that it will be a surprise at 20 weeks, or at 40. But if I had one more, I think I would wait… just for the “adventure” in it. It was helpful though in planning to know.

    I had a surprise the first time, amnio the second time. My husband wanted to know baby’s gender and the nurse told him, “It’s your wife’s body and her results.” That lasted about ten seconds. My daughter, on the other hand, does not like surprises at all, so she wanted to know as soon as possible. Congratulations! Baby is beautiful!

    My baby is 30 this week. She was the only one we knew the gender — there are 3 older brothers and it was a relief to only think about girls’ names. Whatever she turned out to be she still had lots of blue outfits anyway. What would I do now? Leave it til the end, I think. I’ve always gone on the “you take what you get” principle.
    When you have more energy, start stocking the freezer!

    Congrats!! I couldn’t imagine trying to maintain a food blog during my first trimesters!

    We didn’t find out the sex for my first child, but many people said I looked like I was going to have a boy. Even the nurse at my OB/GYN said that the heart rate usually meant that the baby was a boy. I had a girl. She was definitely a surprise after I had psyched myself up for a boy!

    Congrats! I had a feeling in your last post that you were going to come up with this news…just a gut feeling, since, at the time you posted it, I was just over my first trimester myself, and I STILL didn’t have any interest in food.

    Looks like we’re almost exactly a month apart. I’m at 21 weeks right now. And, NO, my husband and I have decided not to find out the sex. We both feel that babies are gender-typed too early, and would like to delay the inevitable as long as possible. The less pink frilly dresses or overalls with trucks and trains on them in the beginning, the better, in our opinion.

    Ari, I really love your blog and wish you a big mazel tov on your pregnancy. It’s such an exciting time. I am mom to three grown children now. When they were born we didn’t have the option of knowing the sex and with the first one, as I was wheeled into the recovery room after his birth, I told my husband I heard trumpets playing in the hallway. He swore there were no trumpets but I was in such a state of bliss from the surprise of having a son and holding him in my arms that I was sure there were (still am! There were definitely trumpets!)So for me, the “not knowing” added to the experience. But… it’s certainly practical to be prepared. Good luck!

    Congratulations! I had an amazing pregnancy both times. I didn’t want it to end. I even did hypno-birthing the second time around. That was even more amazing, and it amazed my doctor & all the nurses how well everything went without drugs.

    We didn’t find out the sex for my first daughter, but the second one, we did ask. The doctor came back with the answer of “probably girl, but not for sure.” I whole-heartedly agree with everyone who says that it’s such a surprise to wait until the end. When the doctor says, “IT’S A ____!” It’s so very exciting and thrilling. You will never be able to recapture that feeling.

    I am so happy for you! I missed getting the emails, but can certainly understand the delay now!
    When I was pregnant with my daughter, who is now 14, my husband and I wanted to know. We were SO excited anticipating what they would tell us when they called. And her birth was so exciting, that I can’t possibly imagine that I would have been any MORE excited if I had not known she was a girl. What we kept secret was her name. The funniest thing happened, though. A cousin of my husband’s (who hadn’t seen us in a couple of years), heard that we had had a baby (but in reality the news at that time was that we were HAVING a baby, because she wasn’t born yet.) He called us and said, “Congratulations! I just heard”. We thought he was congratulating us on the pregnancy, and thanked him. He said, “What’s her name?” Again, we thought he heard we were having a girl and wanted to know what we were naming her. So I said, “We’re not telling anybody yet.” There was a long silence. Then he said, “When was she born?” I cracked up laughing, realizing that he thought that she was already born but that we were keeping her name a secret from everyone! We all had a good laugh.

    We found out the sex – I couldn’t stand to wait – plus I bought TONS of clothes and such. Personal preference, of course. (Second time around? I may wait. IF there is a second time around. HA.)

We wanted to know before.. and we had 3 boys, but it was so good to find out and call the baby his name, buy things that they would use and wear accordingly, and when I looked at stuff I knew what to buy and look for, but as in the past moms did not know, they used their instinct better I guess :-) So, what is your guess?     Congratulations! May your children have the same love and appreciation for food as you.

    The doctors don’t like to say with certainty what the sex of your baby is when looking at the ultrasound (fear of getting sued for making a mistake?). But my brother-in-law is an ultrasound tech and he had no problem pointing out the “boy parts” on our son’s first ultrasound.

    I found out the gender of both of my kids before they were born. I have a lot of friends who have chosen to wait, and I think there’s value in doing it either way. It’s about your comfort level. I enjoyed knowing, and being that I’m pretty neurotic about most things, this was just easier for me. ;)

    I have no children, so I cannot weigh in on the gender issue.

    A number of my friends have recently had their own first babes, and even if they knew the gender they didn’t tell people. I think it was to cut down on the number of frilly obviously girly pink clothing. For some reason, I find more of the girl baby clothes objectionable.

    P.S.- Before I forget, I had a quick question for you. A representative from Stoneyfield Farm came across my blog and contacted me to offer some coupons for free products (including their Oikos Greek yogurt). She thought I might be interested in testing their yogurts in my baking. I know that you often use yogurt in your recipes, and I was wondering if you had any suggestions about what I should make. Do you have a favorite baked good that incorporates yogurt? Any ideas would be fantastic. Thanks so much!

      To answer your question: there are many recipes I make with yogurt but Oikos is greek yogurt so it can’t be substituted in recipes for regular yogurt (it has a very different flavor). If I were you I would search the web for recipes made specifically with greek yogurt.

Just wanted to clarify- I do have coupons for the greek yogurt, but I have some for their other products (regular plain yogurt) AS WELL.     Big congrats to you and welcome back! Also glad you are feeling better. That first trimester can be rough. We found out with both our boys. I am not good at delayed gratification and I just couldn’t wait 40 weeks. I think it really helped my husband bond with the unborn baby knowing the gender.
