Celebration Coconut Layer Cake (Plus Book Giveaway)

I’m usually not the sort of person to succumb to depression but these past few weeks can only be described by that melancholy word. Tears were a daily companion, sleep was an infrequent friend and I lost interest in everything I usually take so much pleasure in – including blogging and baking. Thankfully my stubborn work ethic forced me to haul myself out of bed and off to work on a regular basis. Oh mom, you taught me well when you said I should never shirk my responsibilities!

You’re probably wondering why I was so glum and the reason is pre-natal test results. Five weeks ago the hospital called us to say that one of our screening tests indicated there might be a serious problem with the baby, so within days I was in the doctor’s office preparing for an amniocentesis. It was nerve wracking to say the least, but it wasn’t until the past few weeks, as the much dreaded yet eagerly anticipated day we’d discover the amnio results came closer, that I began to sink into sadness. What would we do if the test results were bad? Granted there was only a 5% chance that the baby had the problem the doctors were looking for, but still, 5%! Much as I tried to focus on the 95% chance that everything was OK my mind kept racing with scenarios that would jolt me out of bed at 2AM and cause me to spend the rest of the morning on the couch trying to distract myself with HBO on Demand.

Then this past Friday at just over 22 weeks of pregnancy our doctor called my husband’s cell phone. My husband was home getting ready for work and picked up without my knowing – only to burst through the bedroom door moments later to excitedly tell me “The baby is OK! He’s OK!” Never in my life have I been so happy. In fact, my husband and I both agree that getting that phone call beat out our wedding day on the scale of happiness – hands down.

After spending some 30 minutes crying with relief we finally pulled it together and got ready for the day, exhausted from weeks of worry and wondering in the back of our minds if that phone call had really happened or if we’d just imagined it. My husband later posted on Facebook:

Best day ever!!! After a !month! we finally got back the amnio results (longest and most stressful month of my life, haven’t slept well in weeks) and our baby is perfect!!!! :-D (after we were told there was a 5% chance of a serious problem based on some of the screening tests, hence the amnio 5 weeks ago). I never cried tears of joy before but I did today, full out, while making breakfast after the dr called! Life is beautiful! Tonight we celebrate!!!! And I felt the baby kick!

So that is where I have been these past few weeks and why the other day I Twittered about being happy for the first time in weeks. I hope you won’t hold my being MIA against me. I’m feeling much better now!

Now where does this coconut layer cake come in? Well, this is a celebration cake that I made with my brother’s girlfriend last Friday for two reasons: first, for my brother’s birthday, and second, as an indirect celebration of the good news I’d received that morning – which is to say, I was able to have someone over and actually enjoy baking again. That evening my husband and I went out for a nice Italian dinner to celebrate and over the weekend we ordered our nursery furniture. Now that everything is OK, life is moving forward again.

The picture at left is from our trip to the apple farm about a week and a half ago. I’m 21 1/2 weeks pregnant here and trying so hard to be happy. Little did I know that good news was only six days away. :)

Coconut Layer Cake with Homemade Frosting

This is a two layered, moist sugar cake with fluffy frosting that’s generously sprinkled with shredded coconut. If you’re not a coconut fan you could easily replace the frosting with chocolate or vanilla.

Ingredients:

For the cakes:

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 1 cup (2 sticks) butter, softened
  • 2 cups sugar
  • 4 eggs

For the frosting:

  • 1 cup sugar
  • 1/2 cup water
  • 2 egg whites (I actually used 3)
  • About 3 cups sweetened shredded coconut

Heat the oven to 350 degrees F. Grease and flour two 9-inch cake pans and set aside. In a medium bowl, combine the flour, baking powder, and salt, and use a fork to mix them together well. Stir the vanilla into the milk.

In a large bowl, beat the softened butter with a mixer at medium speed until creamy. Add the sugar and continue beating, stopping to scrape down the sides, until the mixture is light and evenly combined. Add the eggs, one by one, beating well each time, until the mixture is thick and smooth.

Add about one third of the flour mixture to the batter and beat well at low speed. Then add about half the milk to the batter, beating well. Continue beating as you add another third of the flour mixture, followed by the rest of the milk, and then the remaining flour mixture, beating well each time until the batter is very thick and smooth.

Quickly scrape the batter into the prepared cake pans, dividing it evenly, and place them in the oven. Bake at 350 degrees F for 25 to 30 min until the cakes are golden brown, spring back when touched lightly in the center, and begin to pull away from the sides of the pans. (Note: I had to bake my cakes for 40 minutes before they achieved these characteristics.)

Remove from the oven, and cool in the pans on wire racks or folded kitchen towels for 10 minutes. Then turn out onto wire racks or plates, turning the layers top side up, and cool completely. You could also split the layers horizontally to make 4 thin layers of cake.

To make the icing, stir the sugar into the water to dissolve it. Bring the mixture to a gentle boil, and cook without stirring for 3 minutes. Then boil for 5 to 10 minutes more, stirring often, until the syrup has thickened and will form itself into a thread about 2 inches long when poured from a spoon back into the pot. Set syrup aside.

Beat the egg whites in a large bowl with a mixer at high speed until they are bright white, shiny, and pillow up into voluminous clouds. (Note: When separating your eggs make sure not even one speck of yolk gets into the whites. If any yolk gets in there it will change the chemical structure of the whites and they won’t take on the billowy appearance you so desire. Also, bring your eggs to room temperature before using them.) While beating at high speed, slowly pour the cooked syrup into the egg whites to blend them together into a fluffy white icing, 4 to 5 minutes.

To ice the cake place one cake layer, top side down, on a cake stand or serving plate. Cover the top with icing and sprinkle with coconut. Place the second layer on top of the iced layer, top side up. First ice the sides to help keep the cake steady, and then spread icing generously over the top, completely covering the cake. Place the cake stand or serving plate on a cookie sheet to catch any loose coconut as you shower the cake. Sprinkle the coconut all over the cake, and then gently pat or fling handfuls of coconut onto the sides and top to cover any bare spots.

    I was HOLDING MY BREATH while reading this but I should’ve known there would be a happy ending! 5 weeks is such a long time to hang in the balance, you poor thing. I’m pretty hormonal these days, thanks to my own pregnancy, so I admit to being weepy at the ending. Enjoy that cake! You deserve it.

    Nearly any flavor although I don’t care for boring white cake. What I like is the frosting! I’d love to get one of those I see at the bakery that has about as much frosting as cake and in cool designs like a monster or clown or such.

    If I’m doing the baking, I like a vanilla cake with buttercream frosting (in a cheery color, of course). But I did just have a lemon cupcake with a well of raspberry jam in its center last week that blew me away.

    I know what you have been through. One of my tests came back with a much higher than normal result that made me have an amnio for my second pregnancy. I was a nervous mess for the 2 weeks that I had to wait. So thrilled that you know your little guy is healthy. Enjoy the rest of your pregnancy – it goes by so quickly.

    So glad to hear that everything is okay. Those tests can be useful, but they can also cause a lot of needless heartache. One of them in particular (I can’t remember which – it’s been almost four years) has a high false-positive rate – so high we didn’t do it. Not worth the anxiety for us.

    Glad to hear that all is ok with the baby – what a relief. I understand you completely about how hard the waiting period is. We were in a similar situation and just waiting around for results is so anxiety-provoking and I couldn’t find a way to stop the worrying. Thankfully all is well though.

    As for cupcakes, I like it simple – vanilla bean cake with a buttercream frosting, though the coconut sounds delicious.

At 26 or so weeks ourselves, we haven’t had any tests come back scary, but until it’s come back, every test has seemed scary, every one has set the darker side of my imagination in motion, so I have some basis for imagining what that must have been like for you two, and I’m so sorry you had to go through it, and so relieved that all is well.

    I’m expecting a baby girl in 2 weeks. While we chose not to have the screening tests done, I felt that I could be very empathetic with all the emotions. (We have lost 3 babies before, so you can imagine the emotions that we have encountered in the past 9 months!)

    You don’t need a reason to celebrate to have coconut cake…You just need to find enough coconut.

    It’s harder to think of a cupcake I don’t like than choosing a favorite. Cupcakes were my choice of birthday cake some mumble mumble mumble years ago (yes, a whole lot longer ago than many of you have been alive – lol).

    Hey! My favorite cupcake is a yellow cupcake with a rich, decadent chocolate ganache on top. I’m also very fond of fruit-flavored ones such as raspberry :)

    My favorite cupcake is kind of boring, but I LOVE white cake with white icing. When I’m craving chocolate cake or cupcakes, it has to be chocolate cake and dark, fudgey icing.

    i’m sure that was a phenomenal relief to you–i’m so glad the news was good! if ever a cake was worthy of being used for celebration, it’s this one. i do love coconut, but my favorite cupcake would be an apple-spiced one with loads of cinnamon cream cheese frosting. :)

    I cannot even imagine what the last few weeks have been like for you. I think every expectant mother worries, whether or not her fears have any basis. To be told that you have a chance of having a serious problem–even only a 5% chance–must have been torture. I am SO happy to hear that everything is fine. Sending you lots of happy thoughts for a healthy second half of pregnancy, and no more reasons to worry.

    Oh, and my favorite cupcakes right now are pretty much any cupcake. But, I’m especially fond of my local bakery’s from-scratch version of the Hostess Cupcake. They call them “TV Treats,” but they’re basically an overindulgent Hostess cupcake, with chocolate cake, cream filling, and a hard chocolate coating.

    Oh, I am so happy for all of you! I can’t imagine how stressful the wait for the test results must have been. Now you can focus on the joy this child will bring to your lives.

    The timing of this post is amazing. I’m getting ready to go into the kitchen to bake coconut cupcakes with raspberry jam filling for my daughter’s 38th birthday. She is a cupcake fan-atic. The book would make a lovely Christmas gift for her. Thanks for the chance at the giveaway.

    I work for a surgeon that repairs birth defects and it is my pleasure to meet with scared moms and dads just like you. I’ve never lived through it, but I’ve sat through many a teary-eyed doctor’s visit, holding a frightened mom’s hand. I’m happy for you that you don’t have to go through that.

    And nothing beats my mom’s cream filled chocolate cupcakes with cream cheese frosting.

    Well. Except her strawberry pie. But we’re talking cupcakes here.

    Congratulations on the very good news!

    I’m not sure I would have kept it together for as long as 5 weeks. That’s a long time to wait for important test results.

    I have to admit that my sweet tooth is so strong that I don’t actually have a favorite cupcake so much as a favorite frosting treatment: lots! I want the cakes to be soft, not too heavy, with a good crumb, which is a little easier to find in a white cake than a chocolate cake.
