A plate of vegetables— sweet corn with olive oil, seasoned broccolli, and either black beans or black eyed peas or sweet potatoes. The colors also make me feel happy.
I love to make a vegetable lasagna to include whole wheat pasta,mushrooms,butternut squash, and fresh sage.
I have three right now and this is a subject I am really into right now with so much overindulging…can’t wait to read all the entries!
1. Tuna and Garbanzo Beans with olive oil and vinegar
2. A cold Bulgur salad with a spicy olive oil dressing
3. tofu and veggies stir fried, no rice but lots of spices
I am not a vegetarian or a “low-carb” eater but these are the things that make me feel healthy and happy.

As you could see from my post, I do not eat any diary.
During the summer, I like a fresh veggie frittata with squash, zucchini, and tomatoes. I also like fish, roasted sweet potatoes, and some fruit. OH…for lunch I like a roasted veggie wrap in an herb tortilla from La Tortilla Factory. There are really so many, it’s hard to just list a few!
To start the day, I would love to have crepes with mountain of fresh fruit (strawberries, oranges, grapes, kiwi, pears, berries…) or freshly baked scones.
For lunch or dinner, I’d have to say either
- spinach salad with cranberries, walnuts and feta cheese
- carrot chile and cilantro soup
- vegetable lasagna
or
- French lentil soup with thyme
- challah!
- vegetable curry on rice or naan
Some homemade applesauce for dessert would be amazing too.
Ari, what are some of *your* favourite meals when you want to feel healthy and happy? I’d love to hear your ideas too ^_^
I love a good, crunchy salad with balsamic, walnuts, cheese and crisp romaine hearts. I also like a nice, hearty sandwich on whole-grain bread with tomatoes, avocado, cucumbers and swiss cheese. YUM.
JL- My favorite ‘happy and healthy’ meals are pretty simple actually. I love, love, love to eat fresh, thick slices of avocado on whole wheat bread with a sprinkling of sea salt. That’s one of my favorite breakfasts. I also enjoy homemade minestrone soup, and sandwiches on homemade bread with slices of tomato, avocado, cheese and a generous handful of sprouts.
Something like vegetable soup or chicken chili.
When I want to feel healthy and happy I make myself a nice big bowl of oatmeal. I presoak steel cut oats and then cook them on the stove top in water with a dash of salt. Then I add in raisins, cinnamon and brown sugar. Of course, I also have to make a nice mug of tea to go along with the oatmeal.
Breakfast: oatmeal with a glass of skim milk
Lunch: smoked turkey sandwich on whole grain bread with baby spinach, fresh tomato, swiss cheese and mustard (having lunch right now - yummy!)
Dinner: whole wheat pasta with marinara, mushrooms and a sprinkling of parmigiano - reggiano cheese; big bowl of veggie salad with fat-free viniagrette
I thought of something else– my mother’s chole. They are garbonzo beans with spices. It is so good!!!
I like to make a nice meaty fish, such as halibut, in parchment packets that are topped with a mix of vegetables - tomatoes, zucchini, green beans, etc., and lemon slices. With a side spinach salad and homemade vinagrette, I feel healthy and happy eating this for dinner!
Steamed chard and a baked sweet potato.
I love to eat oatmeal for breakfast everyday, it always makes me feel happy and healthy.
Delicious watermelon for a snack… especially when in season. For a switch up I add a little bit of crumbled feta cheese.
For dinner, steamed broccoli with a small amount of melted butter on top.
I love to eat a green salad with lots of garbanzo beans, red beans, carrot slivers, sunflower seeds, broccoli pieces,spinach leaves,shredded cheese, croutons and blue cheese dressing. I know the blue cheese dressing probably isn’t the healthiest…but then again it’s the thought that counts.
That makes me feel happy and think healthy.
My favorite health fodd that is also my comfort food is a HUGE bowl of organic vegetable soup. With tons of carrots, zucchini, caulilower, onions and of course — chick peas. I feel healthy, warm and of course HAPPY!
Summertime feel good meal - swiss chard (from my urban garden plot!) sauteed with garlic, onions, pepper, sea salt and finished with a splash of balsamic vinegar, sliced ripe tomatoes (also from garden!), skinless chicken thighs marinated (my marinade has lime, jalapeno, etc) and grilled outside (cheaper and more flavorful than chicken breast).
Wintertime feel good meal - Mexican chicken soup (my recipe is muy delicioso and healthy!), and corn tortillas with avocado and queso fresco on the side (tortillas are better charred a little over an open flame).
What I’m eating right now, even though it’s the first time I made it: An African stew with beans, greens, millet tomatoes and lots of spices. This time of year, warming and grounding…I need that!

I love shrimp on the BBQ. I marinate it and skewer it and BBQ it. Serve with some pineapple couscous and a spinch salad and I’m one happy (and healthy) camper!
Green tea grilled salmon, with a spinach salad and some good crusty Greek bread. There’s also something about mangoes that makes them go well with this, but maybe that’s just me.
As it gets colder, the meal I most like to eat when I want to feel healthy is a big bowl of vegetable soup with a slice of home-baked crusty bread. Our most recent recipe was a fantastic roasted cauliflower and fennel soup, pureed until it was thick and smooth.
